Pear-Lavender Jam

Pear jam is among my favorite jams. I use it often while roasting meat in the oven to achieve a golden-sweet glaze. My mom makes it with geranium leaves, but since I have lavender in the garden, I used that. You can add vanilla or lemon rind if you wish.

3 kg pears
1 kg brown sugar
To make a jam, select hard pears. Wash them thoroughly.
Peel the skin and dip the pears in a bowl of water with the juice of one lemon in it to prevent browning.
Seed the pears and cut into the desired size pieces.

Sprinkle with 500 g brown sugar and let them rest overnight.
Prepare hot syrup from 2 cups water and 500 g brown sugar. Stir in the bowl content - pear pieces and syrup.
Bring to boil, add a bunch of lavender sprigs and cook until desired thickness is reached. Stir occasionally with a wooden spoon.
