Spinach Cream Soup

How it's made: 

This soup is a love story between spinach and milk;) Spinach loves milk, and milk makes the specific and slightly bitter taste of spinach mild and pleasant.

To prepare the soup, in a large pot, sauté the finely chopped onion and butter until translucent. Add diced potatoes, season with salt and cook for 5-10 minutes. Add milk and hot water and bring to boil. Add washed and drained spinach leaves and cook for 15 minutes.

Purée the content of the pot with a blender adding a few fresh mint leaves. Return it back to the pot and add salt if necessary. Stir in the heavy cream. Serve the soup warm with feta cheese or boiled egg.
