Simple Pumpkin Soup

How it's made: 

When it comes to making pumpkin soup, only the sky is the limit. And surely, the best pumpkin soup is the one you put your heart and soul into making. This recipe is simple, simple, simple.... yet genuinely delicious.

Peel and seed the pumpkin. Chop into large chunks and place into a boiling pot. Add chopped onion, vegetable broth and salt to taste. Bring to boil, reduce heat and let it simmer for 15-20 min.

When ready, purée with a food processor or blender and return to pot. Add pepper and a pinch of nutmeg. Stir in olive oil and heavy cream and cook until heated through. Do not boil the soup, else you risk scalding the cream.

Serve with toasted pumpkin seeds. Drizzle with pumpkin seed oil if you wish, to add an extra nutty flavor.

2 onions
1/2 cup heavy cream
