Roasted Fennel with Parmesan

How it's made: 

I must confess that Fennel is not part of my family's culinary tradition. But, I have a soft spot for Mediterranean cuisine where fennel is prominent ingredient. So, here is how to prepare quick and easy to make fennel side dish.

Preheat the oven to 200 degrees C (400 degrees F). Cut the base and the greens off of the fennel bulbs, and slice the bulb vertically into 4-6 pieces. Remove the slightly whiter core. This is optional, but helps the fennel cook faster.

Bring water to boil in a medium-large pot. Add salt and boil the fennel in for five to ten minutes. If you like your fennel crispier, boil it less. Then, transfer to a shallow baking dish. Stir in the sour cream and spread over the fennel. Sprinkle Parmesan cheese on top, add small chunks of butter and place in the preheated oven. Bake until the top is golden brown.

Shopping list: 
2-3 fennel bulbs
1 tablespoon butter
1 1/2 cups sour cream
1/4 cup grated Parmesan cheese
pinch of salt
