Puff Pastry Asparagus Tart

How it's made: 

On a lightly floured surface, roll the puff-pastry into a rectangle, large enough to fit your baking sheet. Paste the pastry on the sheet and lightly score the dough 2-3 cm in from the edges to mark a rectangle. Pierce the inside of the square with a fork. Thus, the inside of the pastry puffs less than the outside and forms the shell of the tart. Bake in preheated to 400 degrees oven for about 10 minutes, or until golden.

Remove the shell from the oven, sprinkle with grated Emmental or Gоuda cheese. Arrange the trimmed asparagus spears over the cheese, alternating ends and tips. Brush with olive oil and season with salt and pepper. Bake at 325 for another 20 minutes, or until the asparagus spears are tender.

Serves 6 or more people. The tart can be served hot or cold and is a great party recipe.

1 puff pastry sheet
200 gr. Gouda or Emmental cheese
500 gr. green asparagus
1 tbsp olive oil
salt and pepper
